Peanut Butter Caramel Torte

Christmas is just around the corner which means more and more delicious Christmas desserts. This Peanut Butter Caramel Torte is the perfect show stopper dessert plus it’s only make with 6 ingredients! I’m all for an easy, wholesome recipe especially on Christmas Day when things are pretty hectic.

Peanut Butter Caramel Torte

Peanut Butter and caramel could be two of my favourite sweet treats and together they make for the perfect dessert. I like to top mine with a bit of coconut yogurt, cacao nibs and a drizzle of runny peanut butter but some fresh fruit like berries and chocolate would also me a great addition. The base of this torte is beyond easy to make and you can always use almonds instead of the pumpkin seeds. Peanut Butter Caramel Torte

Ingredients

For the base

1 cup oats, blended into flour

1/2 cup pumpkin seeds

1/2 cup peanut butter 

2-3 tbsp maple or date syrup

For the caramel

1 cup boiling water

12 medjool dates, pitted and soaked in boiling water

1/2 cup peanut butter 

Optional Toppings

3 tbsp coconut yogurt

3 tbsp peanut butter

1/4 cup cacao nibs

Method

To make the base add all of the ingredients to a food processor and blend until combined. Line a small cake tin with baking paper and tip the base mixture into the bake tin. Press down firmly and place in the fridge to set while you make the caramel. 

To make the caramel add all of the ingredients to a blender and blend until a smooth paste forms. Tip the caramel onto the base and place int he fridge to set for an hour.

Top with coconut yogurt, peanut butter and cacao nibs.
