Hempy Granola

After a bit of research I’ve come up with a delicious granola recipe which has no refined sugar or oil! I feel like nothing compares to making your own granola in taste and in this case the nutritional value. This recipe used Tahini and dates to create the clusters which we all know is the best part about granola. If you haven’t used tahini in baking before I would definitely recommend, its has the most amazing texture and is filled with so many healthy fats, vitamins, minerals and antioxidants. I love to use it in both sweet and savoury cooking.

It doesn’t take long to whip up in the morning and can last up to two weeks.. but I can guarantee it won’t last that long!

Serves: 6

Minutes: 45

Ingredients

8 pitted dates

1 cup tahini

3 cups oats

1 cup of nuts (I used macadamia & cashews)

1/2 cup currents

1/4 cup dried blueberries or cranberries

1/4 cup chia seeds

1/4 hemp seeds

1 tsp cinnamon

Method

Preheat the oven to 180 degrees and line a baking tray.

Measure and place all of the dry ingredients in a bowl.

Place the dates and tahini + a bit of water in a blender and blend until smooth.

Pour the dates and tahini into the dry mix (I used my hands to make sure it was all combined)

Pour onto the baking tray and spread evenly, bake for around 30 minutes or until golden brown, tossing the granola once or twice to ensure it cooks evenly.

I had mine with fruit, coconut yogurt and almond milk. It would also be nice on top of smoothies, yogurt or even just as a snack by itself!
