These are probably some of the best chocolate chip cookies I’ve made. I really couldn’t be bothered doing dishes but I also really felt like making cookies so I thought why not use my blender to make some.

Nothing beats a good chocolate chip cookie and these are perfectly moist, chewy and chocolatey! They’re also vegan, rsf and can easily be made gluten free.
Makes 10 cookies

Ingredients
1 tbsp flax meal
1/3 cup coconut oil
1 tbsp almond butter
1 cup coconut sugar
2 tbsp almond milk
1 cup plain or gluten free flour
1/2 cup almond meal
1 tsp vanilla essence
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 cup chocolate chunks

Preheat your oven to 180 degrees and line a baking tray with baking paper.
Add the flax meal, coconut oil, almond butter, coconut sugar and almond milk to a blender and blend until smooth and combined.
Next add the flour, almond meal, vanilla, baking powder, baking soda, salt and blend until the mixture turns into a cookie dough consistency.
Finally add your chocolate chips and combine – you may need to mix the dough with a spoon.
Roll into balls and place on your baking tray. Cook in the oven for 12 minutes.
