I always seem to accidentally make pancake recipes. I love to throw ingredients in a blender and chuck them on a pan. I’ve been making these for weeks now and I’m officially obsessed.
The best part is, this recipe only requires 5 ingredients plus they don’t fall apart when you cook them like lots of oat pancake recipes do. This recipe makes 3-4 pancakes but feel free to double the ingredients to make more.
1 cup oat flour
1 tsp baking powder
Pinch of salt
1 tbsp protein powder (optional)
1 overripe banana
1/2 cup soy milk
1 tbsp apple cider vinegar
Blend your oats into oat flour and add them to a bowl with the baking powder and protein if using.
Add the banana, soy milk and apple cider vinegar to a blender and blend until smooth.Pour into the oat flour and mix well to combine.
Cook pancakes on a hot pan non stick with a bit of coconut oil.
Feel free to add blueberries or chocolate chips to the batter before you flip them.
