Vegan Tahini Chocolate Chip Cookies

The most delicious vegan chocolate chip cookies using one of my all time favourite ingredients. Tahini is possibly one of my favourite things to use both in sweet and savoury cooking. It’s actually really hard to find creamy tahini here in New Zealand and I finally found a delicious brand Almir Bakery. I accidentally found it in Farros the other day and was genuinely so excited. They also make Andrews favourite store bought falafels bites. I’d love to try bake with black tahini so if anyone knows a good brand I’d love to know! I spent all day remaking these vegan tahini chocolate chip cookies trying to make the recipe perfect. So here it is, chewy tahini chocolate chip cookies! Topped with flaked sea salt there really is nothing better. Tahini has an earthy, nutty flavour which pairs perfectly with the sweet, rich dark chocolate.

I’ve been writing a classic chocolate chip cookie for a while which is going to be in my cooking project next year so stay tuned for that! I think I’ve eaten more cookies in the past few months than in my entire life (which I’m definitely not complaining about) I could possibly be turning into a cookie soon. I’m getting really excited this week as Andrew and I are heading down south for a two week camper van trip – I also haven’t been skiing in a couple of years so can’t wait to get to the snow! We’ve grown up skiing in some pretty amazing places overseas and it still seems so strange to not be able to catch a flight somewhere.. Our house in Queenstown should be almost finished too so I thought it would be a fun idea to make an ultimate food guide for Queenstown as I know so many New Zealander’s are planning to visit this year (and hopefully tourists once we open the boarders again.) In the mean time try out these nutty flavoured, chewy textured and completely delicious cookies.

Serves 10:

Minutes: 30

Ingredients

1/2 cup melted coconut oil

3/4 cup coconut sugar 

2 tbsp creamy tahini

2 tbsp soy milk

1 tsp vanilla

1 1/2 cups organic white flour

1 /2 tsp baking soda

1/2 tsp baking powder

Pinch of salt

1/2 cup chocolate chips

Method

Preheat the oven to 180 degrees and line a baking tray with baking paper. 

In a small bowl add the melted coconut oil, coconut sugar, tahini, vanilla and soy milk. Using a hand mixer, beat on low speed until combined and creamy.

In a seperate bowl add the flour baking soda, baking powder, salt and chocolate chips and mix through.

Add the wet ingredients to the dry and fold through. Scoop out 1-2 tbsp of the cookie dough to your baking tray (a cookie scooper has been one of the best purchases I’ve made for creating equal sized cookies) place in the oven for 14-17 minutes until golden. 

Remove from the oven and top with flaked sea salt.

Note: I haven’t made these GF yet but I think gluten free flour would work.
