This Salted Caramel Granola is perfectly sweet and salty, it’s got to be one of my favourite breakfasts at the moment. Each bite is filled little chunks of oats, hazelnuts and peanut butter. All sweetened with maple syrup and protein. You can add any dried fruit you like to this mixture, sometimes I like to add dried banana or freeze dried raspberries.
I’m sitting here on a rainy Saturday, eating the last of this granola while I write this blog post and it really could be one of the best breakfast recipes I’ve made. I found out during lockdown that I’m 10000% a sweet person for breakfast (except for when I’m hung over, then I need a big bowl of potatoes.) When I was a swimmer I could get away with eating both a sweet and savoury option as all I did was eat, sleep and train but since quitting I realised I probably don’t need two large portions of breakfast’s anymore… To be honest that’s the thing I miss the most about being an athlete.
Homemade granola in general has got to be one of my favourite foods to make. Before I started healthykelsi I never even really thought to make my own. Which seems silly now because it’s beyond easy and doesn’t take much time at all, plus it’s so much healthier and tastes even better when made from scratch!
You could add any flavour protein you like to this recipe but I just love the salted caramel. I’ve been using Two Islands protein for the past few months and it works really well in baking because of it’s smooth texture. I also have a cookie recipe using their vanilla protein here if you wanted to try those out.
I promise once you start making homemade granola you’ll never go back. This recipe is a super healthy way to start the day as it’s made with whole grains and unrefined sugars and oils. Try it for yourself!
2 cups of oats
2 scoops salted caramel protein
1 cup chopped nuts (I use almonds and hazelnuts)
2 tbsp maple syrup/honey
3 tbsp peanut butter
1/4 cup melted oil (I use avocado)
1 tsp vanilla
1/2 tsp salt
Pre heat your oven to 180 degrees and line a baking tray with baking paper.
Add all of the ingredients to a bowl and mix to combine.
Place the granola onto the baking tray and cook in the oven for around 30 minutes until golden. Tossing the granola every 10 minutes.
Top with your favourite fruit and yogurt.
