Dragon fruit has always been one of my favourite fruits. (I think because it was such a pretty colour I obsessed with it as a kid.) When we lived in Fiji I remember visiting the markets and always asking my parents for the ‘Pink fruit.’
I know dragon fruit to some people may seem a bit strange and you’re not really sure what to do with it. It’s actually the fruit of several different cactus species indigenous to the Americas. Which means it comes in many different varieties. But like I said, Pink is a personal favourite. The taste almost reminds me of a kiwi fruit!
You could also just make this recipe as a smoothie but makes such a delicious dessert if you freeze it.
1 pink dragon fruit
2 frozen bananas
1/2 cup coconut milk
Blend all of the ingredients together and place in a loaf tin in the freezer over night. It will be very solid the next day so remove it from the freezer to thaw 10 minutes before serving and mash it up with a fork.
