Mango Sticky Rice is amazing Thai classic dessert known as khao niaow ma muang. I’m sure you would have heard of this dish before as it’s one of the most well known Thai desserts. It’s so quick and easy to make and the result is absolutely delicious.
Rice pudding was always a family favourite dessert growing up. I love the creamy coconut taste when paired with the sweet mango. I made this using Nutty Bruce’s almond and coconut milk which worked really well.
For the Sticky RiceI recommend adding more liquid than you think to create the creamy texture. If you can’t find glutinous rice, risotto rice works really well. You could also change it up from the classic mango combination and add what ever flavours and toppings you like. 1/2 cup glutinous rice
2 cups coconut milk
3 tbsp honey or maple syrup
Pinch of salt
1 tbsp sesame seeds
In a small pot add your rice with 1 cup of the coconut milk and leave to simmer. Once the liquid has absorbed add another 1/2 cup of milk along with the honey and salt.
Once the liquid has absorbed again add your last 1/2 cup of milk and stir to combine. The mixture should be sticky and sweet.
Add to a plate with your cubed mango and top with sesame seeds.
