Healthy Vegan Pasta Recipe

I love making Healthy Vegan Pasta Recipes and this one is beyond easy! It’s made with only 4 ingredients and mostly made up of roast capsicums. I like to use a quinoa or brown rice pasta – I find it doesn’t leave me feeling overly full as normal pasta. I love the Ceres Organics quinoa pasta range!

Made entirely with whole, plant based foods this pasta is the perfect hearty lunch or family dinner and it genuinely only takes 20 minutes. All you need is a blender or food processor! 2 capsicums

2 cloves of garlic 

1/3 cup soy milk

1/2 cup sundried tomatoes

Method

Pre heat your oven to 200 degrees and line a baking tray with baking paper. Slice and add your capsicums to the tray and place in the oven for 15-20 minutes to roast.

In the meantime add your garlic, soy milk and sun-dried tomatoes to a blender along with the roast capsicums once they’re cooked and blend until smooth – add more liquid if needed. 

Tip into your pasta and stir though – top with fresh basil or parsley, salt and pepper.
