Eggplant is such an underrated vegetable – it’s so versatile and makes for the perfect side dish. This Harissa Roasted Eggplant is such a simple but delicious dish. I love the spice from the harissa paste when paired with the crushed ginger.
I’m such a huge fan of eggplant and roasting them turns it perfectly tender and crispy at the same time. I’ve roasted eggplants so many times before and the other night I decided to add harissa paste and it turned out so delicious I’m now obsessed. It’s such a dreamy combination. Plus all you have to do is coat the eggplant in Harsisa paste and ground ginger and roast them in the oven! Genuinely takes no effort at all and you end up with such a tasty dish. This eggplant works perfectly with my Honey Mustard Roasted Potatoes, Mushroom Wellington and my favourite summer salad Broccoli & Asparagus with sesame dressing.
Harissa Roasted Eggplant
2 egg plants, sliced into cubes
1 tsp harissa paste
1 tsp crushed ginger
Pre heat the oven to 180 degrees and line a baking tray with baking paper. Add all of the ingredients to the tray and stir through with your hands so the egg plant is coated. Roast in the oven for 20-25 minutes until tender.
