Green Mac & Cheese

Mac and Cheese is one of my favourite comfort meals made healthy. It’s the perfect way to sneak in a few extra nutrients without tasting the vegetables vegetables. Ir requires only a few simple kitchen staples so it really couldn’t be any easier.

Nutritional Yeast is officially one of my all time favourite ingredients. It creates that cheese texture and flavour in sauces. I’ve also been using this amazing Umami seasoning from a local mushroom grower, which you can purchase here. https://www.orasfarm.co.nz (I put it on EVERYTHING)

1 cup broccoli

3 potatoes

1/4 of an onion

1 tsp garlic powder

1 cup spinach

Juice from half a lemon

1/2 cup soy milk

1 tsp whole grain mustard

3 tbsp nutritional yeast (optional)

500g Pasta (I use chickpea)



Begin by boiling two pots over the stove (one for your pasta and one to cook your potatoes and broccoli)

Roughly chop the potatoes in small cubes and place them in the boiling water. Also begin cooking your pasta per packet instructions.

Next chop your broccoli and place in a steamer over the potato pot with a lid on.

While your vegetables are cooking add the onion, garlic powder, spinach, lemon juice, soy milk, whole grain mustard and nutritional yeast to a blender.

When your vegetables are soft add them to the blender and blend until smooth.

Mix the cheese sauce with your pasta and top with chilli flakes and mushroom seasoning.
