This is the perfect Beetroot Curry for an easy family dinner. I had the most amazing beetroot growing in my garden and I really wanted to do them justice. I absolutely love this recipe purely because of how quick and easy it is as well as being jam packed with flavour.
Its been a very exciting week as a lot of the vegetables we planted over winter are now ready to eat. We planted tonnes of leafy greens as well as beetroot, bok choy, rhubarb and even garlic! If you have beetroots growing in your garden I love to use the leaves as a simple green salad, which means none of it goes to waste.
I think curry is possibly one of my favourite dinner foods. This Easy Beetroot Curry is only made with 8 ingredients and takes less than 30 minutes! I love to pair it with rice or quinoa as well as some greens, fresh chilli and avocado. Easy Beetroot Curry
1 onion, diced
3 cloves garlic, finely chopped
1 tbsp ground coriander
1 tbsp mustard seeds
1 tbsp graham masala
1 large beetroot, cut into cubes
1 x 400ml can coconut milk
1 x 400g can chopped tomatoes
In a medium sized pot add your onion and garlic with a little bit of water to stop it from sticking. Once the onion is translucent add the ground coriander, mustard seed and graham masala and stir through until fragrant.
Next add your beetroot and stir to coat in the spices. Then add your coocnut milk and chopped tomatoes. Cover with a lid and leave to simmer for 20-25 minutes until the beetroot is tender.
Serve with fresh rice, salad and avocado.
