Coconut Bircher Bowls

These Coconut Bircher Bowls are such an easy delicious breakfast idea (my go to in summer when porridge is a little hot.) The best part is this breakfast bowl only needs to be mixed through and left in the fridge while you prepare what you need to start the day. Once you’re ready, enjoy it with your Coconut Bowl and your favourite toppings. 

I posted this on my instagram last week and it’s been such a big hit. You can make it with or without the chia pudding but I think it adds such a delicious texture and flavour.

Coconut Bircher Bowls

Serves 2

Minutes 5


1 cup rolled oats 

2 tbsp pumpkin seeds

2 tbsp sunflower seeds

2 tbsp sultanas

1 1/2 cups coconut milk

Fresh fruit for topping

For the chia pudding

2 tbsp chia seeds

6 tbsp water

½ tsp blue spirulina 

  1. To make the chia pudding, add all of the ingredients to a bowl and mix well to combine. Place in the fridge while you make the Bircher.
  2.  To make the Bircher, mix all of the ingredients together in a bowl and leave in the fridge for 20 minutes to make sure that the oats are well soaked and soft.
  3. Serve your Bircher into your favourite Coconut Bowls and top with the chia pudding and fresh fruit.
