With Christmas coming up quickly I thought I’d share one of my favourite holiday inspired salads. This Cauliflower Herb & Pomegranate Salad is the perfect amount of salty from the roast cauliflower, sweet from the fresh pomegranate and creamy from the yogurt dressing.
I originally made this recipe for the company Coconut Bowls who I absolutely love working with. ‘Coconut Bowls are the ultimate symbol of sustainability. I’m really loving all of the summer salads at the moment. It’s something about this weather that makes me want to eat fresh delicious foods and have picnics on the beach. Which is why this Cauliflower Herb & Pomegranate Salad is the perfect summer meal.
Cauliflower Herb & Pomegranate Salad with Yogurt Dressing
1 cauliflower head, cut into pieces
1 tsp cumin
½ tsp turmeric
1 tbsp olive oil
½ cup chopped parsley
½ cup chives
Seeds from 1 pomegranate
2 tbsp coconut yogurt
1 clove garlic, crushed
¼ cup water
½ tsp cumin
Pre heat your oven to 200 degrees. Add your cauliflower cumin, turmeric and olive oil to a tray and place in the oven to roast for 20 minutes until golden.
In a medium sized bowl add your parsley, chives and pomegranate. Once your cauliflower is cooked add it to the bowl and mix to combine.
Mix all of the dressing ingredients together and pour on top of the salad.
