Campervan Vegetable Soup

This specific Vegetable Soup recipe came to me while we were sitting right next to Mount Cook in our little camper van. I ended up buying a few spices and staple ingredients so we could continue to make delicious homemade food. This recipes really doesn’t require many ingredients and you could easily add and remove any vegetables you have or don’t have handy.

I absolutely love soups and stews in winter, I think they’re just what your body needs to feel nourished over the colder months. We’ve been skiing a lot on this trip and there’s nothing better than a warm soup for lunch up on the ski field (and a few punnets of hot chippies) nothing beats hot chippies! I love adding lentils to my soups and curry’s to thicken them up – but again you can really add what ever you want to this recipe! Make it your own.

Serves: 2

Minutes: 30

Ingredients

1 onion

2 cloves garlic

2 carrots

1 tbsp cumin

1 tbsp ground coriander 

1 large sweet potato

1 whole small broccoli (including the stalk)

2 1/2 cups vegetables stock

1/2 cup lentils 

1 tbsp soy sauce

1 tbsp apple cider vinegar 

1 handful of spinach

Method

In a medium sized pot add your onion, garlic and carrots with a little bit of water and cook for around 5 minutes. 

Add the cumin and ground coriander and stir though. Then roughly chop and add the sweet potato and broccoli. Stir through to coat in the spices.

Pour in your veggie stock and lentils and cook for 5 minutes then add your soy sauce and apple cider vinegar.

Cook the soup until the sweet potato is soft then add the spinach at the end.
