Broccoli & Asparagus with Sesame Dressing

This is such a simple summer salad using a bunch of fresh greens and a super flavoursome sesame dressing. I always think my Christmas lunch is made up of a bunch of delicious sides and this easy salad is a perfect refreshing dish to go with all of the heavy meals.

Broccoli & Asparagus with Sesame Dressing

Is it just me or is there something about summer that makes you want to eat tonnes of fresh fruits and vegetables? I always end up eating such a variety of plants over summer (mainly because of all the different summer fruits.) I made this sesame dressing for the first time the other day and it’s defiantly going to be a staple dressing in our house. You can always double the recipe and leave it in the fridge for up two weeks.

Broccoli & Asparagus with Sesame Dressing
Ingredients

20 stalks asparagus

1 broccoli 

3 cloves garlic, finely chopped

1 tbsp sesame oil 

3 cups rocket

For the dressing

1/4 cup sesame seeds

1 tbsp sesame oil

1 tbsp Tamari

1 clove garlic

1cm piece of ginger 

Juice from 1 lemon

dash of water

Method

In a large pan over medium heat add your asparagus, broccoli and garlic. Toss through the sesame oil and cook for around 5-10 minutes. Remove from the heat and set aside. 

To make the sesame dressing add all of the ingredients to a blender and blend until smooth. In a large salad bowl add your rocket as well as the broccoli and asparagus. Top with the sesame dressing and toss through.
