Black Forest was all time favourite chocolate flavour when I was a kid! I remember on family ski trips dad would keep a slab in his ski jacket pocket and we’d eat it on the chair lift.
This is a super easy raw slice that doesn’t take to much time. It almost has a mousse like texture. It’s really nutritious and definitely satisfies those afternoon chocolate cravings making it the perfect afternoon treat.
Raw slices are probably one of my favourite things to make, daily because that you can almost add anything you like to the mixture. Whether as baking you have to be a bit more precise other wise it can turn into a fail pretty quickly. Minutes: 120 (including freezing time)
2 cups almonds
1/2 cup desiccated coconut
2 tbsp raw cacao
6 dates (soaked)
1 tsp vanilla
Black Forest Layer
2 cups cashews (soaked)
1 cup canned coconut milk (you want to use the creamy part at the top not the water)
2 tbsp cacao powder
1/4 cup maple syrup
1 cup frozen cherries
1 cup frozen black berries
Make sure your cashews have either been soaked overnight or for 20 minutes in boiling water.
Soak your dates in boiling water for 5 minutes and line a slice tin with baking paper.
Add your almonds, coconut, cacao, soaked dates and vanilla to your food processor and blend until combined. This mixture should be able to stick together. Pour the mixture into your slice tin and leave in the fridge to set while you make the top layer.
For the cheesecake layer add your soaked cashews, coconut milk, cacao and maple syrup and blend until smooth. Finally add your cherries and black berries and blend. Pour on top of your base layer and leave in the freezer to set for at least 2 hours.
I like to keep mine in the freezer and let it thaw for 5 minutes before eating.
