I love quick and easy snack ideas. These apricot protein cookies are so deliciously chewy made with only a few simple ingredients. Feel free to add to add any dried fruit and chocolate you like to the mixture.
Something a little more fancy than your usual bliss balls. These cookies with satisfy those afternoon sweet cravings. They only take 30 minutes including cooking time to make. I like to make them on a Sunday so I have my snack sorted for the week. This recipe can also be made gluten free by using almond meal instead of oat flour.
I love using oat flour in my baking, it creates a really nice flavour and texture to the cooking. I made these 10 minute oat flour pancakes last week which again are so easy and delicious. I love showing people that you don’t need to have heaps of spare time to eat a healthy balanced diet.
If you don’t want to use protein in these cookies just add an extra 2 tbsp of oat flour to the mixture. My favourite protein at the moment is definitely Two Islands Coconut & Vanilla which you can purchase here. It really is perfect for baking as it doesn’t have that grainy texture.
2 cups oat flour
2 scoops vanilla protein
1/2 cup desiccated coconut
3 tbsp maple syrup
3 tbsp tahini
2 tbsp melted oil
1 tsp vanilla essence
1/2 cup plant milk
1/2 cup chopped apricots
Preheat the oven to 180 degrees and line a baking tray with baking paper.
Blend your oats into oat flour and mix all of the ingredients together in a bowl.
Add 1 tbsp of the dough to your hands and roll into balls. Place them on the baking tray and press the mixture down with your fingers.
Cook for 25 minutes until golden.
