Apricot & Almond Muesli

It’s no secret I love making homemade granola. But this Apricot & Almond muesli is something else. Quick, easy and extra delicious!

I’m currently in Wanaka on a family ski trip and this recipe came about because the local shop only sold whole oats so I thought why not change things up from my usual clustered granola to a simple crunchy muesli. This recipe is super easy and made only in one bowl which makes clean up a ten times faster. You can also adapt this recipe to what you have in your pantry – feel free to use any nut butter, vegetable oils and dried fruit you like.

Serves: 6

Minutes: 40

Ingredients

2 cups whole oats

1 cup sliced almonds

1/2 cup hazelnuts

1/4 cup chia seeds

2 tbsp nut butter

2 tbsp maple syrup

3 tbsp coconut oil

2 tsp cinnamon 

1/2 cup dried apricots, chopped

1/2 cup sultanas

Method

Pre heat the oven to 200 degrees and line a baking tray with baking paper.

Add all of the ingredients excluding the dried fruit to a large bowl and mix through. Place the muesli onto the baking tray and spread over the pan.

Cook in the oven for 20-25 minutes until golden – tossing the mixture every 10 minutes. Remove from the oven, add the dried fruit and mix through.

Serve with coconut yogurt and fresh fruit.
