For as long as I can remember I’ve wanted pancakes every Sunday. I used to make them up from scratch when I was younger which meant it was a 50/50 shot if they were going to be edible. I think I’ve come along with the pancake making because these Apple Pie Pancakes are seriously tasty!
These Apple Pie Pancakes are made with only 7 ingredients and are gluten free, vegan, rsf and nut free. I’m actually quite obsessed with this recipe – the sweetness from the apple when paired with the spice from the cinnamon is just perfection. I love to top with with a whole bunch of fresh fruit as well as coconut yogurt and maple syrup.
Andrew and I always try demolish the entire stack of pancakes and I think I should be getting concerned with how easy they are to finish now… If you’re looking for more quick and easy pancake recipes I absolutely love making these Oat & Banana ones.
Makes 6 Pancakes
1 cup buckwheat flour (any flour would work)
1 tsp baking powder
Pinch of salt
1 tbsp chia seeds
1 apple, grated
1 tsp cinnamon
1 cup plant milk ( I use rice milk)
Add all of the ingredients to a bowl and mix well to combine.
Heat a large non stick pan over medium heat and grease with a little bit of coconut oil. Add around 2 tbsp of batter to the pan and cook for around 2 minutes until bubbling. Turn and cook for a further 1-2 minutes.
Once cooked top the pancakes with fresh fruit and maple syrup.
